Hello lovely Bubby and Bean readers! I'm Lauren from The Perfect Pear, and I'm super happy to be here sharing my new favorite healthy frozen pop recipe. I think its officially become popsicle eating weather, or at least around here it has, so lately I've been whipping up all kind of different popsicle recipes. This one is definitely my favorite!
INGREDIENTS (makes around 6 frozen pops)
- 1 avocado
- 1 cup lemon or lime yogurt
- 1-2 lemons
- 1/4 cup honey
- 1 banana
DIRECTIONS
1. In a blender mix the avocado, honey and a few tablespoons of juice from your lemons until well combined. Pour this mixture into popsicle molds/containers, about halfway full.
2. Now fill your blender with the yogurt, the rest of the lemon juice (or desired amount), and the banana. Blend that up, and pour mixture into popsicle containers until almost full.
3. Place in the freezer for a few hours or until frozen.
4. Remove from freezer, grab a mojito, and enjoy on a nice hot day!

These look absolutely delicious! Love love love the idea to use avocados. I wonder if they can be made without special popsicle holders? Because I want to make them now and I don't have popsicle molds lol! =)
ReplyDeleteI've made popsicles before using paper cups instead of molds. Cover them with foil and stick a popsicle stick or chopstick in the top. It works! :)
