As you guys know, we make an attempt to eat healthy around here. I've posted before about my daily smoothies, I've shared favorite plant-based and vegetarian recipes, and mostly recently, I talked about my plans to make healthy snack choices for the holidays. I'm a firm believer though that you don't have to sacrifice taste (or even decadence) when eating healthy - which is why I've been eating cakes for breakfast recently. It's true. No, they haven't been frosting-laden bakery-style cakes. Nor have they been syrup and butter-smothered pancakes. But they've been just as delicious.
These cakes (which, FYI, are my newest favorite breakfast food) come from a company called Dr. Praeger's Sensible Foods. They make seriously scrumptious seasonal and savory veggie pancakes that make it super easy to get daily vegetable servings from yummy spinach, broccoli, sweet potato, zucchini and carrots featured in their breakfast cakes. They're also ridiculously easy to prepare - you just throw them in the oven, pull them out less than 10 minutes, and serve. And I love that the Dr. Prager's company is a family owned and operated business who started out small and has grown into a leader in the all-natural, vegetarian, vegan, gluten free, and kosher frozen food categories. Once I tried their veggie pancakes, it was easy to see why.
The ingredients are GMO-free, simple, and few - and items you could find in your own kitchen. You can serve them endless ways too. We've tried them tossed into veggie scrambles, served them with fried eggs, and topped them with applesauce, sliced bananas, and greek yogurt. My 10 month old daughter is a huge fan of Sweet Potato Pancakes, I love the Broccoli variety, and my husband's favorite is Spinach. We are officially an eat-cakes-for-breakfast family.

ReplyDeleteIf you read the ingredients list, you'd be surprised! Not all frozen foods are overly processed. In fact, frozen veggies (which is mainly what makes up these cakes) have been shown to be as healthy as fresh. Thank you for your opinion though! :)

ReplyDeleteI don't think I can pick just ONE favorite! I love all of them! I just made a lasagna the other day in which I included broccoli and spinach pancakes as layers; I made it in a loaf pan, kind of a lasagna loaf, lol; It was very good! Laura K
