I feel like it's such a cliche when you have young kids to talk about how consistently exhausted and/or overwhelmed you are, but man... I'd be lying if I said I felt great at the end of any given day. I'm usually simultaneously fried and frazzled, and during the spring and summer months when the weather is nice and my little ones are go-go-go from the moment they wake up, I am in serious need of a few minutes to kick my feet up with an adult beverage once evening rolls around. These days we can't exactly head over to the local bar at 5 PM, so Robbie and I decided that during the warmer months, on the days he's off the road, we'd create our own happy hours at home. He is normally a beer drinker, but we've gotten into trying new things for our little happy hour parties and have been having fun inventing cocktails. Today I'm sharing our current favorite, Mango Lemon Prosecco cocktails topped with blueberries. This one is especially great for happy hour timing because it's a sweet little snack that makes for a nice before-dinner treat without spoiling the appetite. And the lemon juice and mango sorbet are actually pallet cleansing, so you can even have one right before dinner, no matter what's on the menu. It's also a quick, easy cocktail to put together - which is essential when you're mentally ready to chill out, like, immediately, thank you very much.

Makes 2 servings
INGREDIENTS
2-3 cups VOVETI Prosecco, chilled
1/2 cup mango sorbet
1 lemon
handful of blueberries
Pour the VOVETI Prosecco equally into two glasses. (You can use champagne flutes if you want to get fancy, but any glass will do.) Cut the lemon in half and squeeze into each glass, taking care to avoid dropping in seeds. Scoop 1/4 cup of mango sorbet into each glass, and top with blueberries. Serve immediately.
While this is our favorite early evening cocktail, it also makes for an incredible after-dinner drink (you don't even need dessert with these gems), and it's perfect for summer parties. The flavor of the sweet mango combined with the bite of the lemon juice is an incredible combination, and getting to eat the soaked blueberries at the end feels like a special treat. But it's the VOVETI Prosecco that really makes this drink. Crafted from 100% Prosecco (Glera grapes), VOVETI is a dry brut DOC Prosecco with tempered acidity and a deliciously fresh profile that makes it exceptionally delicious in cocktails (or alone!). It features flavors of pear, green apple, melon, and ripe peach, and and it's marked by fine persistent bubbles, which make it wonderfully refreshing for the warmer months. It's my top choice for our happy hour cocktail inventions - and my beer drinking husband agrees.

While we have indulged in a glass (or two) of wine almost every day since we arrived in Europe, I admit that cocktail hour at our place never looks this fancy. These cocktails look absolutely gorgeous, and since I'm a sucker for all things involving champagne, I will be saving this recipe for a day when I'm feeling super motivated ;)
