Red, White, and Blue Sweet Salsa + Chips

You guys! The Fourth of July is just a few days away! For me, all of the most wonderful stereotypes about summer seem to come together into this one magical holiday, and in the days leading up, I feel excessively inspired and in full on summertime spirit mode. One of my favorite things to do the week before Independence Day is to experiment with new patriotic themed dishes that I can bring to the annual Fourth party we attend. This year, my favorite recipe ended up being something deliciously unique (but still easy, which as you know is a must when it comes to me preparing food!). It's the perfect snack dish to quickly whip together this Fourth that your friends and family are sure to love, and it takes a beloved summer party dish - chips and salsa - and makes it (literally) even sweeter.

Red, White, and Blue Sweet Salsa + Chips


Serves 6-8

INGREDIENTS
1 jar CHI-CHI’S® Brand Pineapple Salsa
1 cup blueberries
1 cup strawberries, sliced
1 cup white sweet corn
1 bag CHI-CHI’S® Brand White Corn Tortilla Chips (Rounds)
1-2 limes
2 T cinnamon
2 T sugar


In a medium bowl, combine the salsa, blueberries, sliced strawberries, and white corn and stir until well mixed. Set aside. Combine cinnamon and sugar in a small bowl or cup. Pour chips into a large serving bowl. Squeeze lime juice on chips, mix, and repeat until evenly coated. Sprinkle with cinnamon and sugar mixture until evenly coated. Serve! (Optional: set aside a small amount of strawberries, blueberries, and corn to sprinkle on the top of the salsa dip for an extra pop of color right before you serve.)


This interesting take on chips and salsa is the perfect flavor combination of sweet and salty (with a little spice), and can be served as a savory snack or even a unique dessert. And of course, the red of the CHI-CHI’S® Brand Pineapple Salsa and strawberries, blue of the berries, and white of the white corn and CHI-CHI’S® Brand White Corn Tortilla Chips incorporate the spirit of the Fourth of July, which makes the dish the ultimate summer party treat. Best of all, thanks to the CHI-CHI’S® Brand salsa, prep time is cut in half. You can whip this together in a matter of minutes, and it's just as delicious as any made-from-scratch salsa dish.

  1. My mouth is practically watering reading this recipe - although sadly, since I'm allergic to both pineapple and strawberries (the two best fruits, gah!) I won't be able to recreate it myself. But I am filing away the sweet corn chip idea for future use. Happy almost Fourth!
