Summertime Watermelon and Feta Guacamole Dip

It's no secret around here that avocados are at the very top of my favorite foods list, and that within my favorite avocado-based foods, guacamole tops them all. Plain old guac is fantastic, but I eat so much of it that I'm always trying to come up with unique spins - especially ones that don't take a lot of time. Recently I was at my dad's for dinner, and he's made the most refreshing, summer guacamole dip I'd ever have. My dad doesn't have quite the same schedule I have (or two very small humans to try to keep alive on a daily basis), so his recipe was as from-scratch as you can get. I decided to make my own (more realistic) version that eliminated some steps and time, and between you and me, I liked it even better than his. And today I'm sharing my recipe with you.

Serves 4

INGREDIENTS
1 package Wholly Guacamole Classic Dip
1 cup watermelon, cut into cubes
1/4 cup feta cheese, crumbled
6-8 fresh basil leaves, cut into strips
1/2 lime
salt

Cut and cube your watermelon (or if you really want to save time, buy it pre-cut) and slice the basil into strips. Combined the cubed watermelon and all of the sliced basil except for a few pieces (to use as top garnish) with Wholly Guacamole Classic Dip and the feta in a serving bowl. Squeeze half a lime over the top, add a little salt, top with the remaining basil, and serve! Easy and delicious. (To make vegan, just leave out the feta or use plant-based feta.)

This hint of sweetness from the watermelon and refreshing burst of basil paired with the richness of the avocado and feta make for the perfect summertime flavor combination. We like to serve it with good quality tortilla chips, but it's also delicious with crackers, as a veggie burger or burger topping, or even as a side salad. And the best part is, it's so easy. I mean, it takes five minutes. This is all thanks to one of my favorite food brands, Wholly Guacamole. You might remember my guacamole pizza recipe I shared back in January that featured Wholly Guacamole, and you may also remember how much I sang their praises. Their super fresh, gluten free, kosher guacs are are made with hand-scooped Hass Avocados and no preservatives, so they taste homemade. Their guacamoles and dips (you have to try the Black Bean Over Guacamole Layer Dip) are perfect for parties (I'm stocked up for 4th of July!), but they're equally great to have in your fridge for everyday meals or snacks. I can't recommend them highly enough for anyone who appreciates a good guac but doesn't want to deal with the time and mess involved with prepping from scratch.
