The official first day of spring may still be five weeks away, but my eye is on the freaking prize, man. I'm busting out my spring time clothes way too early, and I'm not ashamed in any way. I'm also starting to enjoy my favorite spring (and even summer) themed cocktails, like my beloved fresh lemonade mimosa. I hope you love it (and my unapologetically spring inspired photos of it) as much as I do.
Serves 6-8
INGREDIENTS
1 bottle champagne or prosecco
4 cups water
1 cup sugar
2 cups fresh squeezed lemon juice
lemons (for garnish)
fresh mint (for garnish)
course sugar (for rim)
DIRECTIONS
Combine the cup of sugar with 1 cup of water in a small saucepan. Bring to boil and stir until dissolved. Allow the syrup to cool, then chill in the refrigerator. In a pitcher, stir together the lemon juice, the chilled syrup, and the remaining 3 cups of water.
Use lemon juice or water to wet rims of glasses and dip each rim into the course sugar. Fill glasses about half way full with lemonade. Top with champagne or prosecco, and garnish each glassed with a lemon slice and sprig of fresh mint.
