For a long time, every time I ordered room service at hotels, I chose a club sandwich without meat. It just felt like a treat. Eventually I decided to experiment with making my own veggie clubs at home, and guys, they were so beyond any other I'd had before. Now they're a staple lunch (and dinner!) in our house. My son even calls them "Mommy's Famous Veggie Club." They might not be famous, but I kind of think they should be.
Veggie Club Sandwiches
Serves 1
INGREDIENTS
3 pieces of whole grain bread, toasted
1 tablespoon plain Greek yogurt
2 slices white cheddar
2 slices aged gouda
1/4 avocado, pitted and sliced
1/2 tomato, sliced
handful of spring greens
Spread yogurt on one slice of bread. Top with gouda and tomato slices. Add another sliced of bread. Top with white cheddar, avocado slices, and spring greens. Finish with top sliced of bread and cut into triangles.
These veggie clubs are perfect for summer picnics too. I hope you love them as much as we do!
