This is an old favorite I shared years ago with some updates that make it even more delicious. We've been eating it a lot around here. It's actually really good cold too, almost like an ultra flavorful salad.
Serves 2-4
INGREDIENTS
3-4 cups rice, cooked (we like jasmine or brown)
1 can black beans, drained
1 avocado
1 cup cherry tomatoes
handful baby greens
lime
salsa verde
salt to taste
cilantro (for topping)
hot sauce (optional)
Cook rice according to package directions. In a small sauce pan, heat black beans until hot. Slice avocado and cherry tomatoes. Pour rice into individual bowls, and top with beans, avocado slices, tomato, and baby greens. Throw on some green salsa and, if you like it (I go back and forth) chopped cilantro, Squeeze a little lime juice on the top, along with sprinkle or two of salt and a dash of hot sauce. Simple and so very good!
