It's Super Bowl Week! Do I watch or care about football? No. Do I love eating Super Bowl celebration food and watching the commercials and the half time show and the PUPPY BOWL? Yes. So much yes. I also feel like with the bleakness of the last year, any occasion where I can celebrate and have fun with my little family is appreciated. For these reasons, I am excited about Sunday, and thought I'd share one of my favorite Big Game recipes with you guys today. I first made this a few years ago as sort of an experiment combining two of my favorite foods - Mexican food and mashed potatoes. It ended up (admittedly to my surprise) being absolutely delicious, and have become a Super Bowl staple in our house ever since. I'm looking forwarding to enjoying it again this weekend.
Mexican Style Loaded Baked Potato Dip
Serves 10
INGREDIENTS
3-4 ounces instant mashed potatoes
2 cups water, boiling
1-1/2 cups plain Greek yogurt
1 8 oz package of cream cheese, softened
2 cups salsa
2 cups shredded Mexican style or cheddar cheese
1/3 cup black olives, sliced
2-3 scallions, chopped
1 avocado, cubed
chili powder
cumin
black pepper
Preheat oven to 350 degrees. Prepare instant mashes potatoes according to instructions. Add Greek yogurt, cream cheese, salsa, and a couple of dashes each of chili powder, cumin, and black pepper. Stir until blended. Scoop mixture into a baking dish and top with shredded cheese and sliced black olives. Bake for 20 minutes or until cheese is slightly browned. Top with chopped scallions, cubed avocados, and a sprinkle of chili powder. Serve hot with tortilla chips.
