I know I share this recipe year after year, but I am constantly tweaking and then feel compelled to give you guys the updated version. These green quesadillas are perfect to make any time (my kids love them), but they're especially fun to make around St. Patricks
St. Paddy's Day Cheese Quesadillas
Serves 1-2
Ingredients
Large spinach tortilla
1 cup grated grated cheddar cheese
3/4 cup baby spinach
1/2 tablespoon coconut oil (butter works too)
1/2 cup green salsa
1/2 avocado, cubed
Small handful of cilantro (optional)
1/2 lime
Melt oil in a large skillet over medium heat. Place the tortilla in the pan and flip to warm both sides. Sprinkle cheese over half of the tortilla, then cover with baby spinach leaves. Fold uncovered side over the top of the covered side to fold in half. Reduce heat and cover the pan for about a minute. Uncover, flip, and cover again for a minute. Repeat this until the cheese is fully melted. Remove from pan and slice into wedges. Top with salsa verde, cubed avocado, cilantro, and a squeeze of lime juice.
