The minute warm weather hits the Chicago area, I am in the mood for tropical drinks. It's like there is a switch in my brain that turns into beach mode as soon as I feel a little freaking sunshine on my face. This is, of course, ridiculous, because being on vacation in the tropics is basically the opposite of my reality (which is currently working in my tiny home office space and taking care of kids), but I still ride with it. And while I secretly wish my go-to drink was something closer to a margarita or pina colada, I've been whipping up some tropical inspired (and much healthier) smoothies that still hit the spot. This one incorporates plain Green yogurt, which is packed with protein and gives it a nice creamy consistency. But you can easily eliminate it for a full plant-based treat.
Tropical Green SmoothieServes 1
1 cup baby spinach
1/2 banana, peeled
1/2 cup frozen or fresh pineapple*
1/2 cup frozen mango
1/3 cup plain Greek yogurt
1/4-1/2 cup water
Combine all ingredients in a blender until you reach desired consistency. (Sometimes I keep it thick and eat it with a spoon in a bowl.)
*If you use fresh pineapple rather than frozen, add a few ice cubes.
Who else gets in a tropical mood once warm weather arrives?
