I swear this is not a food blog. It just happens to be that time of year where I'm actually in the kitchen instead of ordering take out. The holiday season is honestly the only time of year where I feel a desire to cook often, and I take full advantage of this. I actually shared this recipe last year and got a ton of emails and Instagram DMs about how much you guys liked it, so I decided to share this year's updated version today. The best part is, it's only semi-homemade and uses a bagged salad as a base. (But if you're extra, by all means feel free to create it from scratch!)
Festive Kale and Cranberry Salad
Serves: 3-4
INGREDIENTS
1 bag Kale Salad Mix*
1 cup kale, chopped
2 mandarin oranges, peeled and segmented
½ cup dried cranberries (sometimes these come in the salad mix)
3 cup pepitas
1/2 cup poppy seed dressing
(*Make sure to grab one with with brussels sprouts, cabbage, and radicchio.)
1. In a large salad bowl, combine salad mix, kale, oranges, and half of the dried cranberries and pepitas. Add dressing and mix well.
2. Top with remaining dried cranberries and pepitas. Drizzle with juice from oranges. Chill or serve immediately.
This is the perfect salad to serve with holidays meals, thanks to the festive cranberry and oranges. It's really pretty to look at too. Enjoy!
