Spicy Black Bean and Avocado Nachos
Serves 1-2
INGREDIENTS
1/4-1/3 bag quality tortilla chips
1 cup pepperjack cheese
1/2 cup black beans
1/2 avocado, cubed
1/2 lime
Chili powder, to taste

Cumin, to taste
Preheat oven to 400 degrees. Line a small to medium cookie sheet with tortilla chips in a single layer. Sprinkle with pepperjack. Top with black beans and sprinkle with chili powder and cumin. Bake for 5 minutes or until cheese is full melted. (I sometimes broil for a minute too to make the cheese nice and brown.) Remove from oven. Use a spatula to move onto plates. Top with avocado cubes, fresh squeezed lime, and another sprinkle of chili powder.
