Spring is still a month away, but my cabin fever is overpowering to the point
that focusing on springtime is basically the only thing getting me through!
You might remember when I shared the vegan/plant-based version of these
adorable crisped rice springtime bird nests on my
Instagram last year. This is the non-vegan version, but you can easily swap out for
plant-based butter and marshmallows. They're fun, easy to make, and the
perfect way to usher in spring or Easter!
Springtime Crispy Rice Nests
serves 12
INGREDIENTS:
6 tablespoons butter
1 bag (10 oz) marshmallows
4 cups crispy rice cereal
egg candies or jellybeans
Melt butter in a large pot over low heat. Stir in marshmallows a little at a time until fully melted. Stir in butter. Remove from heat and slowly stir in rice cereal until thoroughly combined. Grease a 12-cup muffin tin with butter and place equal parts of the mixture into each cup, using a spoon to form into “nests.” Cool completely and top with egg candies of your choice.
